BAKED BACON & GUACAMOLE JALAPEÑO POPPERS

Pump up your game holiday spread with this ridiculously cheesy jalapeño poppers recipe.  It’s the perfect finger food appetizer filled with bacon, fresh corn and topped with guacamole.  Everyone will be coming back for more.

Ingredients

  • 8 large jalapeños
  • 1 cup fresh corn kernels
  • ½ cup HORMEL® BLACK LABEL® Bacon, cooked and crumbled
  • ¼ cup chopped green onions
  • 4 ounces Cheddar cheese, shredded
  • 1 (8-ounce) package WHOLLY GUACAMOLE® Classic Guacamole
  • Garnish: fresh cilantro sprigs, pico de gallo

Directions

  1. Heat oven to 400°F.
  2. Slice jalapeños lengthwise and remove ribs and seeds. In medium bowl, combine corn, bacon and green onions. Spoon corn mixture into jalapeño halves and place on lightly greased baking sheet.
  3. Bake 12 minutes. Remove from oven and sprinkle with cheese. Return to oven and bake 5 minutes more. Top with 1 heaping teaspoon guacamole. Garnish with pico de gallo and cilantro if desired.

 

SAVORY BACON & GUACAMOLE STUFFED SWEET POTATOES

Sweet potatoes are a crowd favorite this time of year, and these Savory Bacon & Guacamole Stuffed Sweet Potatoes will be the best sweet potatoes you’ll have all year.  This lighter version of the classic loaded potato will be all the rage.  The pairing of guacamole and sweet potato is absolutely delicious and will get rave reviews at dinnertime.  It also makes a beautiful presentation for guests!

Ingredients

  • 1 large sweet potatoes
  • 1 tablespoon vegetable oil
  • 1 (8-ounce) WHOLLY GUACAMOLE® Organic Guacamole
  • ¼ cup sour cream
  • ¼ cup chopped green onions
  • ¼ cup HORMEL® Real Bacon Pieces

Directions

  1. Heat oven to 400°F.
  2. Wash sweet potatoes. Rub with oil and place on baking sheet. Bake 45 minutes or until tender.
  3. Let stand 10 minutes. Cut slit in top of potato and stuff with guacamole. Top each with 1 tablespoon sour cream, green onions and bacon pieces.

 

FUDGY CHOCOLATE AVOCADO BROWNIES

It doesn’t get any better than deliciously fudgy avocado brownies.  The avocado makes the chocolate even richer, and adds wholesome monounsaturated fat to keep you full longer.  You can even make these gluten free by subbing the all-purpose flour with a gluten free baking flour.

Ingredients

  • 6 ounces bittersweet chocolate, chopped
  • 4 tablespoons butter, softened
  • ¼ cup WHOLLY® Chunky Avocado Dip
  • 3 large eggs, at room temperature
  • 1 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder

Directions

  1. Heat oven to 350° F.
  2. Place bittersweet chocolate and butter in a microwave-safe bowl. Microwave in 30-second intervals (at 50% power), stirring between each interval, until smooth. Add avocado and cocoa powder, stirring until combined. Set aside.
  3. In medium bowl, whisk together eggs, sugar, vanilla and salt until combined. Add chocolate mixture, stirring until blended. Fold in flour just until incorporated.
  4. Pour batter evenly into lightly greased foil-lined 8-x 8-inch pan. Bake 35 minutes. (Do not over-bake.) Transfer pan to wire rack and let cool completely in pan.
